Mariepaule Vermersch is once again offering to the highest bidder a brunch for you and 14 of your most favorite pals and family members. The menu: authentic Belgian waffles garnished with fresh fruit and cream. Ham, bacon, and eggs can be served on the side, if you wish.
Here's a little history to explain why this is special and why we're calling it authentic:
Before the start of WW II, Mariepaule's parents in Brussels were baking waffles that were fluffier and lighter than the traditional waffles we know in this country. They sold them at the 1958 International Exposition in Brussels and then came to Flushing Meadows, NY to sell them in the Belgium Village at the 1964 World's Fair. They were called "Brussels Waffles" in Belgium but Mariepaule's mother realized, after the first few days, most Americans didn't know where Brussels was; thus the name "Belgian Waffles." And what a sensation they were! Her parents, Mr. and Mrs. Vermersch, are recognized as the folks who introduced them to the U.S.
Mariepaule worked with her waffle-baking parents at the World's Fair and elsewhere for years to come. They traveled the Midwest and East to lots of State Fairs and then settled for 35 years in Syracuse to provide their Belgian specialty to waffle-hungry crowds at the New York State Fair.
Mariepaule later journeyed to the Taos Ski Valley and was in northern New Mexico for a number of years until she headed south and opened her own coffee shop in downtown Albuquerque (no longer in business).
The important thing: Mariepaule is still making those waffles and she can create a very special occasion for you and your brunch mates. Fifteen of you at your house or another's, the scent of Belgian waffles wafting in the air as she bakes them on the premises.
