Chinatown Brasserie offers one of the most exciting dim sum programs in New York City led by executive chef Joe Ng, who received specialized training in kitchens throughout Hong Kong. Creating these Cantonese specialties since the age of 11, 36-year-old Ng has prepared dim sum at restaurants throughout the United States, including Jasmine Seafood Restaurant in San Diego, a number of restaurants in Monterrey Park, CA, Ming Palace in Kansas City, MO, and Ocean Port Seafood in Bensonhurst, Brooklyn. Ng creates all dough and fillings by hand. Ng is an expert in creating colored sculptures from high-gluten flour. These colorful pieces are often in the form of dragons, phoenix, tigers, and birds, and are traditionally presented as decorative gifts during banquets celebrating Chinese marriages and milestone birthdays.
