Since opening in 2012, Urban Union has been named one of the Best Restaurants of 2012 by Chicago Magazine, one of Chicago's Ten Hottest New Restaurants by Zagat, and one of the Top Ten Wine Lists in the Country by Eater.com. Most recently, Urban Union received a 2013 Michelin Guide Bib Gourmand Designation.
Urban Union is the culmination of 20 years of Chef Michael Shrader's work and travel. The seasonal, small plate menu features artisan cuisine inspired by Chef Shrader's love affair with Europe.
The food is paired with craft beers, spirits from boutique distilleries, and one of the best pound for pound wine lists in the country.
Chef Shrader has earned international acclaim for his rustic approach to fine dining cuisine. After graduating from the California Culinary Academy, he earned the exclusive opportunity to study with renowned chef-instructor Madeline Kamann as one of only four California chefs accepted into the Beringer School for American Chefs’ graduate program in St. Helena, California. In 1995, he received the sole United States scholarship to the Ritz Escoffier Ecole Gastronomique in Paris, where he received extensive training in the history, technique and method of French cuisine.
Upon his return to the United States, Shrader embarked on an impressive path through the country’s fine dining scene, most notably serving as founding/executive chef for The Nine Group, overseeing the openings of the corporation’s N9NE locations in Chicago, Palm Springs, and Las Vegas, as well as the N9NE and NOVE restaurants in Dallas. Prior to taking the helm of The Nine Group, Shrader held positions as the executive chef of Buckeye Roadhouse in Mill Valley, California; chef de partie at the Michelin-rated Le Bellecour in Paris, France; and executive sous chef at the acclaimed Stars restaurant in San Francisco. Most recently, Shrader served as executive chef of Epic restaurant in Chicago’s River North neighborhood.
