Jordan is among the top 10 countries in terms of producing and exporting tomatoes, which constitute around 65 per cent of its total exported agricultural produce. The long, hot summers and mild winters are perfect for growing tomatoes, as well as eggplant, cucumbers, broad beans and melons in all seasons.
Although tomatoes only entered cooking in this region about 100 years ago, they have become an invaluable element of local cuisine, whether tossed with cucumbers and sumac in a salad, or prepared in a sauce for meatballs or eggplant.
Artist's Note:
The ripe redness of Jordanian tomatoes makes them appear enticing whether you believe they are vegetables (as nutritionists generally attest) or fruit (as determined by botanists).
