Blended of 86% Cabernet Sauvignon, 7% Merlot, 5% Cabernet Franc and 2% Petit Verdot, the deep purple-black colored 2016 Cabernet Sauvignon rocks up with quite a profoundly earthy nose of tilled black soil, underbrush and truffles over a core of baked plums and warm cassis plus a waft of dried herbs. Medium to full-bodied, the palate is packed with vibrant black fruits and a solid structure of ripe, grainy tannins, finishing with bags of vivacity. Drink 2019-2025.

Wine Enthusiast 90:
This wine blends in Petit Verdot, Petite Sirah and Malbec, reining in the bold, tart red fruit to create a medium-bodied, softly textured palate with a leathery backbone. Clove notes are followed by a chocolate chaser on the lingering finish.

Vinous 91:
Opaque ruby. Fresh cherry, blackberry and pipe tobacco on the highly perfumed nose, which is accented by candied licorice and mocha notes. Concentrated and sweet in style, showing no rough edges to the sappy black and blue fruit and vanilla flavors. In a plush, open-knit style, showing impressive closing punch, polished tannins and a lingering floral quality. Drink 2020-2025.
Beringer Knights Valley Cabernet 2016, Sonoma, California
Wine Advocate 90:
Blended of 88% Cabernet Sauvignon, 5% Cabernet Franc, 5% Merlot and 2% Petit Verdot aged in 30 new French oak for 16 months, the 2016 Cabernet Sauvignon Knights Valley features crème de cassis, Black Forest cake and wild blueberry scents with suggestions of wild sage, black soil and tapenade. Full-bodied with a wonderfully plush, fine-grained frame, it has a lively line cutting through the densely packed fruit, finishing long. Drink 2020-2028.

"Deep Dreams is the amusing name of this serious wine which is made by Ry Richards, assistant wine maker to Phil Titus at the famous Chappellet estate on Pritchard Hill. Richards has a clear preference for elevated sites. I was struck by the dark tones, depth and power of the wine with a delicious overlay of concentrated Cab fruit. This is like a California version of a St. Estephe. Here the earthiness is balanced by fully ripe fruit which creates a sensation of depth-as in the name of the wine. Way more wine than the price might suggest."
