Following his time at CNN, he served as an information officer at the United Nations where Watkins reported, wrote, and edited stories on climate change and Ebola in the years leading up to the 2014 UN Climate Summit. At the Paris Peace Accord, Watkins was responsible for translating climate policy to news sources around the world. Watkins also wrote and edited for the World Health Organization focusing his work on HIV, TB, malaria, and the Health Emergencies Programme.
