Ready! Sit! Eat! Yep, this will race straight to your sun-longing soul! Tender, free-range pork (can't you just see them rolling in the clover?) from TC Farm braised in fresh-squeezed lemon juice, white wine and EVO oil, simmered with the Season's available greens--amaranth, mustard, dandelion, arugula and any mix thereof.
Light, zippy, yet somehow substantial and chock full of sun!

Served with a chunk of Wisconsin cow's milk feta.

We still prefer this dish with the dry, full-bodied rose, Kleoni; it seems to ignite the dish with light.

After 5pm! Marinated in Petimezi*, Greek EVOO, and sherry vinegar, garlic, mint these tender lamb chops from Hidden Stream Farm are flame grilled to order, drizzled with more Petimezi sauce, sprinkled with a chiffonade of basil and mint, served on cumin scented jasmine rice with a side of mustard and mint yogurt. We paired ours with Roditis, Nemea and Oenodea for a perfect light and tasty meal!

*Petimezi is a traditional sweetener made from the reduction of MUST, the pressed juice of grapes. Often referred to as Grape Molasses

One of the most requested additional entrees...a cold crop that gets a bit pricey in July....thanks to the cool season we ordered a case! John, Pamela, Brian, Rene, Christine, Shirley...come and get it! Organic cauliflower braised with onions and diced tomatoes...how delicious can simple get??

Served with feta cheese.

We paired it with a spicy red: Chrisohoo Xinomavro, Lafkiotis Agirogitiko, Surly's, Bender. and the herbaceous white, Daphnes by Lyrarakis.

Brought back for Valentine's Day and as a promise for Spring: all-natural lamb shanks braised in extra virgin olive oil and white wine, simmered with organic, globe artichoke hearts (yes, we shuck the leaves for you!) sweet carrots, scallions and fresh dill. This is Anna's absolute favorite, a dish that she judges Greek restaurants by: if they attempt to make the dish, it's a decent diner, if it's good, she'll recommend it!

We still recommend Boutari's Naoussa with its "dark tart" berry,"Xinomavro" as the "go-to" wine for anything avgolemono: it's full, yet balanced tanins velvetize the acid of the lemon sauce.

The soup that we didn't know was Greek until we found it in the definitive cookbook! Yummy and as simple as can be.

One Saturday as newly opened, we arrived early in the morning only to realize that the "house-simmered stock" had not been prepared. Devastated we wracked our heads and came up with "Fava Style Soup". Only because Fava is prepared with golden split peas and we grew up eating Split Pea Soup we made the jump. Two months later we found it in our favorite cookbook: the chef grew up eating it in Greece. We still get more calls for the availability of that soup than any other. It's Anna's favorite winter breakfast.
