Why Blue Bottle?
My first experience tasting Blue Bottle was in the Ferry Building in San Francisco. There is a lot of great Third Wave coffee out there, but I recall something intangibly amazing about that cup. Aside from the smaller organic farms, the passionate roasting, the stellar execution…perhaps I was experiencing the young company’s ethos, which are very aligned with Sparkroot’s. We’re honored to be the only AZ joint to represent this wonderful company.

Why Downtown?
I believe that downtown Tucson is on it’s way to being a cornerstone of this fair city. Since moving XOOM to Congress St. in 2009, I’ve witnessed the writing on the wall. I have lived in great urban areas (NY, SF), and am thrilled to be contributing to the private sector revitalization, along with the great folks at HUB, 47 Scott, YO, Daniel Diaz, Janos, Rialto, Hotel Congress, I could go on and on…

The Name?
Made up, love the flow, and the implicit meaning: we hope to spark the burgeoning creative energy of downtown, while being rooted in the lovely community around us.

The Space?
We’ve had more props sent our way on the design of Sparkroot than I can even process! It was an amazing collaboration between myself, Repp Design + Build, FS1, Cutshaw Yeager, and the myriad of artists who contributed to every little detail. If I was shooting for a 10, it goes to 11, thanks Nigel.

The Fare?
We decided to be a bit contrarian, in terms of typical coffee shoppe offerings: no buttery pastries, greasy spoon, no flour, no added sugar. Instead, light house-made simple dishes, covering a wide range: granola and yogurt, soup and salad, sandwiches and crostinis. No meat, sorry carnivores!

A coffee shoppe with liquor?
Yes indeed, but none of the hard stuff; yet we offer a great selection of micro beers and wines, to compliment our delectable dishes in the later part of the day, and evening.

So just what is Sparkroot?
Coffee is the soul + heart, but we’re so much more….a novel concept that pulls the best parts of a coffee shoppe, restaurant and bar into one space — that is truly for everyone.
