Whether you pan-fry, grill, saute, stir-fry, poach, steam, bake, or broil it, there's no better fish than the fish one gets in Seattle. The vast majority of it comes from sustainable fisheries (rated "best choices" by the Monterey Bay Aquarium), many in Alaska; the boats are based in Seattle and the fish is fresh and wonderful. A local specialty is alder-smoked salmon.
