Item Description

This auction is for four 8 oz. jars of Kitsap River's handmade Chunky Cherry Chocolate Jam, made with delicious ripe Washington state Bing cherries, an amazing amount of Scharffen Berger unsweetened chocolate (99% cacao, 1% vanilla bean), fragrant spices, lemon juice, calcium water, citrus-derived pectin, and your choice of local Washington fireweed honey, pure cane sugar, or Splenda. Kitsap River is also willing to consider using white grape juice or stevia if desired but either would be highly experimental and results are not guaranteed in either case. Absolutely no other ingredients are used at any time (except honey type may be substituted for another good local honey from a small apiary if fireweed honey is not available).

The jam is made entirely by hand in very small batches of a dozen jars or less in a farm kitchen in Washington state. The recipe is available nowhere; Kitsap River came up with it and with the technique used to make it. River's chocolate jams taste like spreadable dark chocolate with distinct fruit notes, not fruit-flavored jams with a hint of chocolate flavor such as you may have previously encountered. Those lucky enough to experience these remarkable jams have reported eating them out of a jar with a spoon. They are also great melted over ice cream or drizzled over French toast.

Shelf life of unopened jam stored in a cool place is a year minimum. Refrigerator life of opened jars varies with the sweetener used but will be at least 3 weeks, provided you can keep your family out of it that long.
