We are pleased to announce a unique culinary opportunity: Fleisher's Grass-fed & Organic Meats' master class--a full-day course that encompasses both slaughter and butchery. This day's worth of behind-the-scenes demonstrations will allow participants to observe examples of sustainable practice in food processing. From a farm visit where a pig will be slaughtered to butchery demonstrations at Fleisher's Meats, participants will see firsthand their local food system in action.
This event is for everyone regardless of culinary knowledge or experience. We welcome professional chefs and butchers as well as anyone interested in finding out where their food comes from.
Morning Session: Observe a slaughter at a family-owned farm.
Lunch: Participants enjoy a fabulous, locally-sourced meal prepared by the Fleisher's staff. Afternoon Session: Fleisher's owner Joshua Applestone and one of our instructors will each lead a butchery demonstration. Afterwards, participants will take part in a hands-on workshop that includes sausage-making and curing charcuterie; all participants take home freshly made sausages.
Dinner: At day's end, participants remain at Fleisher's shop for an exclusive family-style dinner cooked by the Fleisher's staff.
