EAT: Rev your engines with Fromage de Tête. Ok, it’s pig's head pâté, and just a warmer-upper for Chef Olivier Quignon’s whole Pennsylvania Green Village Farms slow roasted suckling pig. It’s stuffed with house made sausage and served family style with swiss chard - gruyere - potato gratin, red and white sauerkraut and spring pea fricassée. Top the whole thing off with our famous flaming vanilla - lemon verbena - red berry baked alaska. Now that’s what we call putting lipstick on a pig!
