Hot pots and street fare that impart the tangy mala sensation (i.e. hot and numbing) are the hallmark of this stylish Sichuan restaurant in Arlington, VA from chef Liu Chaosheng. The menu features a variety of xiao chi - little street food dishes - both hot and cold. Hot-pot meals are a long-standing tradition in Chengdu, the capital of Sichuan province, where a family typically gathers around a communal hot pot for dinner, cooking fresh vegetables and strips of tender meat or fish in a flavorful, bubbling broth. The hot pot process, however, has been streamlined for American sensibilities. Rather than using a large, centralized cooking pot, Mala Tang offers each diner their own individual pot from which to cook.
