Stag's Leap Wine Cellars FAY Estate Cabernet Sauvignon 2007 3L
The FAY vineyard is where the Stag’s Leap Wine Cellars story began. In 1969, the Stag’s Leap Wine Cellars’ founder tasted Nathan Fay’s homemade 1968 Cabernet Sauvignon from his vineyard – the first planted to Cabernet Sauvignon in the area, which would later become the Stags Leap District. Admiring the wine’s structure, supple fruit and balance, he purchased an adjoining ranch soon after, now known as S.L.V. Then, in 1986, he bought Nathan’s vineyard and named it FAY in his honor. Today, FAY, along with S.L.V., remain the heart and soul of the winery estate.
Vineyards & Winemaking
This Cabernet Sauvignon comes largely from blocks on the lower and middle sections of the FAY vineyard, which give the wine its classic red-fruit tones and aromatic top notes. About 20% of the blend is sourced from the eastern blocks of FAY, which tend to be more powerful and lend structure to the wine. When the various lots are blended and aged in French oak barrels, the resulting wine gives us the classic expression that is a hallmark of our estate-grown Cabernet Sauvignon, “an iron fist in a velvet glove.”
