Item Description
Paul has worked in restaurants from Key West, Florida, to Anchorage, Alaska, including two years manning the charcoal grill and wood-fired brick oven at the famed Al Forno in Providence, Rhode Island. He opened Daddy-O’s in Cambridge in 1991, which featured grilling over hardwood charcoal and smoking, and which quickly became a Cambridge favorite. Daddy-O’s enjoyed a nine-year run, closing in the fall of 2000. In her article about the closing, Alison Arnett, restaurant critic for the Boston Globe, called Daddy-O’s “a quintessential neighborhood restaurant which, in fact, probably helped define the concept.”
In October 2001 Paul opened Macondo Latin Grill, again highlighting cooking over natural fuels. Due to the unfortunate timing of its opening and other factors, and despite good reviews (“The menu spans Chile, Argentina and many other points of the Latin world with dishes that are finely made, quite beautifully presented, and reasonably priced”, Alison Arnett) Macondo closed in September of 2002.
Since then Paul has spent four years as executive chef of The Fireplace in Brookline, helped open the kitchen at Z Square in Harvard Square, and spent four years as general manager and chef of Brandy Pete’s, a financial district institution.
