Waters Winery is an artisanal boutique winery located in Walla Walla, Washington. Waters was founded in 2005 based on the indelible belief that the Walla Walla Valley terroir is capable of producing distinctive red wines that rival the finest of the Old and New World regions alike. Waters produces just a few thousand cases of small lot bottlings each year, aimed at reflecting an underlying sense of time and place, and enhancing the food and wine experience.
2007 Waters Cabernet Sauvignon
Barrel aged for 2 years on French oak, this deep, ruby Cabernet begins with an earthy cinnamon stick nose, followed by hints of clove, eucalyptus and sagebrush, with an undercurrent of cured meats. The mouth is rich, full-bodied and round, with a classic profile of dark fruits, tobacco, leather, truffles, pencil shavings, herbs and spices and rustic finish. The mature vineyards of Cold Creek and Pepper Bridge used for this wine add layers of structure, depth and complexity without compromising its balance and elegance.
2007 Waters Syrah
This wine is known for its high natural acid, creamy mouth-feel, refined tannins and balance of fruit and earth, making it the ultimate wine for food pairing. The aromatics and flavors are marked by numerous layers - black cherry, cola, cracked pepper, Asian spices, olives, mushrooms, grilled meats, charcuterie and so on. The structure is lush without being over-ripe, and offers a streamlined burst of acidity from the tip of your tongue to the back of the mouth. This rather distinct energy in the palate forces you to think more about the crescendo of structure rather than the long finish.
2007 Waters Syrah Forgotten Hills
If you enjoy earthy, smoky, stinky, musty Syrah, made in a quintessential Old World style, you will love this wine. Forgotten Hills is our most patriotic wine, as the first wave of aromatics in the glass will be gun powder, flint and smoke. The smokiness ushers in layers of earthy, food-friendly expression - mushrooms, truffles, white pepper, bacon, dried fruit, cloves, anise and rhubarb. The wine feels big without being modern, sweet or extracted. Complexity abounds in this wine and it will evolve beautifully and considerably over many years. And don't be shy, open it up and put it to the test ... against anything.
2008 Waters Interlude
The nose is poignant – focused and ripe with spice covered red fruits. Bright, mouthwatering fruit continues through the mid-palate with explosive boysenberry and gooseberry. This versatile wine can easily stand alone or be paired with many of your favorite dishes.
