It also covers field dressing, sourcing directly, foraging, and hunting respectfully and sustainably. 

An autographed copy of Hugo Ortega's Street Food of Mexico. Ortega is the executive chef of the Houston restaurant Hugo's, which was selected by Texas Monthly magazine as one of the top five interior Mexican restaurants in the state, in 2010.
