In an era when the trend in restaurants is toward sleek minimalism, Bouley is a thrilling blast from the gaudy past, a reminder of how much pleasure can be had just from being tucked into such opulent chambers and attended with such formal manners. The servers are punctilious and numerous. The atmosphere remains a sappily romantic one: Vaulted gold ceilings, Impressionist-style paintings, tapered candles, crushed velour and stonework add up to sappy, thrilling romanticism with a French touch. A delightful feeling of giddy privilege only on par with Daniel and Per Se.
A meal at Bouley has many peaks. There are some knockout dishes, among them rich appetizers of Truffle or Oyster that underscore how many intriguing ingredients Mr. Bouley can pack into one composition and coax into harmony. There’s probably not a chef in town who can turn out chicken as tender as Mr. Bouley’s, garnished with black truffle and a fresh almond purée. His cod, meantime, is almost like whipped cream, a fork slips so smoothly through its snow-white flesh. The flesh gets a bold contrast from a quasi-crust of black onion powder over it. And no restaurant outdoes Bouley when it comes to dessert.
