Paul Bunyan, the super-sized logger of the North Woods, is one of the famous Minnesota folk heroes.   His constant sidekick was Babe, a mammoth blue ox he found in a snow bank in the famous winter of the blue snow, or so the story goes.  Babe was known for her love of the chilly winter and her massive strength—so strong, in fact, that she could pull a crooked road straight.

Inspired by these stories, our roasters created a blend for the chilly winters here in our northern home. Hints of ginger and marmalade brighten a smooth dark chocolate base borrowing from Central America and Africa to create a cup that's warming and as spirited as its spunky namesake.

Peace Coffee Alchemy Series - The Alchemy Series draws its inspiration straight from the origins of science. Alchemy connotes a discipline that is equal parts craft and scientific method. Trade a warehouse for a medieval tower, a roaster for a crucible, and our roasters have a lot in common with alchemists of old. Each batch is carefully tended, tracking time vs. temperature, tasting for terroir and technique. When the roaster's craft perfectly marries the nuances of the beans origins, the result is a delicious cup of black gold.

The process repeats itself every time you brew a cup: the perfect proportions of beans and water with just the right grind will unlock all the secret elements of the source and the mission of the roasters.

World Market Organic Guatemalan Estate Coffee - shade-grown on small, family farms in Guatemala these coffeee beans benefit from nutrient-rich volcanic soil that produces more acidity than other regions in the country.  Shade-grown beans develop solowly resulting in a velvety body, lively aroma and pronounced acidity with cocoa and spice overtones.

World Market Colombian Supremo Coffee - A premium coffee, Supremo is prized for their large size.  When brewed, the beans produce a balance of rich taste, full body and mild acidity.  This Columbian coffee is chosen primarily from the Huila and Antioguia high mountain regions.
