Item Description
Square Deal Farm is a real farm located in the arctic finger of Vermont’s Northeast kingdom. Our sugar orchard produces the sweet sap that we boil down to make pure maple syrup. Square Deal Farm came to us, and we to it, by chance, fate and enormous good fortune. We have been farming here since 1997 and have embraced the challenges of a climate that offers three short months of summer.
We believe in the importance of sustainable agriculture and bring those beliefs into action in all our farming practices. We raise Pinzgauer cattle and pastured pigs, grow potatoes and harvest our own hay in addition to managing our forestland for timber, wildlife and, of course, maple syrup production.
About the Grades Vermont maple syrup is available in four grades or flavors. Generally, the lighter grades (fancy and medium amber) are produced earlier in the season, and darker grades (dark amber and grade B) are produced later. Both medium and dark amber are just the thing for pancakes and waffles, fancy is a favorite for ice cream and dessert toppings and grade B, prized for its dark color and rich maple flavor, is sought after for cooking. Our pure maple syrup and maple sugar are certified organic by Vermont Organic Farmers. Their inspectors have followed our sap from tree to sugarhouse where it is made into maple syrup and sugar. Every step along the way has been checked to make sure that we manage our sugarwoods sustainably -without chemicals or pesticides- and that everything that comes in contact with our sap, syrup and sugar conforms to their rigorous standards. Our syrup is tested for lead contamination and carefully packed and coded so that it can be traced back to its boiling day and the drum the syrup was stored in. To lean more, visit NOFA.
