When Chef Evy Ballegeer moved to Berkeley, she delighted her friends by treating them to her delicious homemade version of Speculoos ( [speky'lo:s] -- arguably the most popular cookie in Belgium).  As the requests for more and more of these delicious treats increased, Evy founded her artisanal cookie company, "Little Belgians." Now, speculoos lovers in the know seek tins of 'Little Belgians' at gourmet venues all around the Bay Area.  The EB crowd is in luck, as you can know indulge in these delightful cookies at the EB online auction.

The crunchy cookie treat gets its distinctive taste from a blend of spices that varies from baker to baker; the 'Little Belgians' mix uses organic ingredients and combines nine spices including cinnamon, cloves, pepper and cardamom.  Speculoos were traditionally made using wooden molds. In 17th- to 19th-century Europe, bakers would commission a carver to create a cookie board with images that reflected popular trends of the day. In honor of that tradition, the 'Little Belgians' speculoos have custom-designed shapes.
