Executive Chef Jun Tan & Sous Chef James Henry shop the Santa Monica farmer’s market weekly, searching for the finest local produce to utilize on a rotating menu. They use organic ingredients whenever possible, and select meats that are raised sustainably, naturally, and with cruelty-free practices.
Cube’s wine selection includes over 400 boutique wines hailing from all 20 regions of Italy. Their wine director travels to Italy regularly to seek out unusual and esoteric selections that are perfectly suited to complement both seasonal and year-round café menu offerings.
Amber, their resident cheesemonger, can prepare a one-of-a-kind cheese plate for you to discover new and interesting types of cheese & charcuterie, or you can mix and match whatever you fancy! Their amazing cheese plates are a favorite among customers and are served on a piece of slate with the name and origin of each selection written out.
