Three Vintage Vertical (2006, 2007, 2008) Cabernet Sauvignon from Tom Scott Vineyard in Yountville, California.
2006 Varietal:
"From Tom and Lauren Scott's lovingly tended vineyard winemaker Bill Ballentine has produced a wine with complex aromas of boysenberry, vanilla and plum with hints of cedar, basil and, surprisingly enough, maple syrup. The exceedingly long palate is full with flavors of plum, cherry and blueberry with flowery accents of jasmine, elderflower and gardenia underscored by a bittersweet chocolate and again, maple syrup character. It is meaty, yet elegant with good soft tannins and a luscious, long finish. While exceptionally delicious now, it will be even better with age."
2007 Varietal:
"The exuberant fruit in this 2007 Barn Burner positively bursts onto the palate. This is not the one-dimensional fruit of a simple wine; it is more like the complex creations of a master chef. Think roasted figs with prosciutto and a sweet balsamic glaze, caramelized bananas with brown sugar and walnuts, wine poached peaches and fresh raspberries bathed in Cassis with toasted almonds. All this beautifully extracted fruit is balanced by herbs and spices such as summer savory, tarragon, anise and black pepper. Although smooth and more than drinkable now, just under the surface are the acid and tannins to take it through a good many years to come."
2008 Varietal:
"The 2008 Barn Burner is a beautiful, well-constructed and integrated wine. As one enjoys the sophisticated loveliness of this wine certain characters begin to emerge, like actors in a well-crafted play. In the nose, the intense fruit of blackberry, nectarine, spiced pear and mangosteen are joined by meaty wood in the form of cedar, cherry and oak. But, let's not forget the arrival of sweet honey and vanilla spiced with the characteristic Balinese Long Pepper that this vineyard never fails to display. In the creamy, velvety palate we add some intensely dark chocolate, a little lingonberry, black current, black cherry and a touch of white birch."
