Salazon Chocolate Co.

In the summer of 2009 the creators of Salazon were on a backpacking trip to Utah. They brought along the usual snacks, you know - energy bars, salty trail mixes, and, as always, some organic dark chocolate bars (a great super food). As they sat around the campfire that night, it struck them that a simple, salted-dark chocolate bar would be the perfect energy good. The idea for Salazon was born.

After fully immersing in the world of chocolate by visiting organic cacao farms in the Dominican Republic and perfecting the recipe (every bar is hand sprinkled), Salazon Chocolate Co. was launched, the first salted chocolate-based brand on the market. Salazon's chocolate bars are made from 100% organic, single-origin, Rainforest Alliance-certified beans in small batches in the USA, and hand-sprinkled with natural, solar-evaporated sea salt.

What does Salazon mean?

Salazon is Spanish for salted and Salazon Chocolate Co. is the first salted-chocolate based brand. Spanish was chosen to pay homage to the Spanish speaking regions (including the Dominican Republic) that have played such a pivotal role in the cultivation and development of cacao and chocolate.

Why combine chocolate and salt?

Salt, when used in moderation, is excellent in enhancing the food it is paired with. This is no different with dark chocolate, one of the most complex and delicious foods known to man. Salazon adds a touch of sea salt to bring out the organic chocolate's nuanced flavors while balancing the sweetness of the sugar and the bitterness of the cocoa.

Why are some of the additional ingredients sprinkled on the bar, instead of mixed in?

Again, Salazon chose not to follow convention. Most chocolate companies mix their additional ingredients into the chocolate when it is melted. However, even though that is easier, it isn't better. The salt, in particular, when mixed into the chocolate just didn't give the texture or taste Salazon was looking for.

These particular bars are 72% dark chocolate. Salazon's chocolate is smooth, not too sweet or bitter, and pairs perfectly with their nature sea salt.
Salazon's single-origin chocolate is made exclusively with organic, Fair Trade and Rainforest Alliance certified Hispaniola beans from the Dominican Republic. These premium beans have been fermented and sun-dried.

The bars are gluten free, but they are processed in a plant that also handles peanut, tree nuts, milk and wheat.

Salazon Chocolate Co. is an independent company based in Maryland. Their bars are made from bean to bar in the US (MD) in small batches using their propriety blend of beans and ingredients. Nobody else uses their chocolate and they don't use anybody else's chocolate.
Salazon Chocolate Co.'s products are fair trade certified through Fair Trade USA. Fair Trade USA gives farmers the opportunity to make a real living by guaranteeing a Minimum Price for their harvest. A Fair Trade Premium is also added to the purchase price which is used by farmer cooperatives for social and economic investments in education, health services, processing equipment, and loan distribution.
