PETITE WHITE
This wine combines the crisp acidity of Vidal and the floral, spicy hallmarks of Gewurztraminer. This light-bodied blend is yellow-white in color with subtle white grapefruit aromas. The strength of the fruit flavors creates the perception that the wine is off-dry, yet it is not. The stainless steel treatment highlights the crisp, coastal acidity. Grassy, white grapefruit flavors linger through the fresh finish, which is medium in length. Both the Vidal and Gewurztraminer components have distinctive flavor profiles which allow this blend to pair well with a variety of dishes. Dry jack, goat and gouda cheeses work superbly with the wine’s spicy, citrus character. Prosciutto, veal parmigiana, sausage, sushi, grilled seafood, Asian or other spicy dishes are also appropriate due to the blend’s fruitiness. Suggested seasonings are black pepper, dill, fennel, oregano and sesame.
PETITE RED
This medium-bodied blend has a crimson color with prominent earthy aromas, of black currants and blackberry, more typical of an old-world wine. The low acidity balances the smooth tannins, which are the result of older French oak aging. The Chancellor and Cabernet Franc lend spice and pepper to the wine, while the Cabernet Sauvignon brings tobacco to the palate. Although the Pinot Noir is a small percent of the final blend, it contributes significant berry flavors. The medium finish exhibits lingering tannins with traces of the dark fruit. This wine is well suited to blue cheese, as well as aged cheddar, gruyere and parmesan. The earthy character matches savory meats, such as venison, roast rack of lamb, steak or beef stew.
