Item Description
Two whole fillets of cold-smoked wild Alaskan sockeye salmon. Our fillets, which we caught in Bristol Bay, Alaska (Bristol Bay is home to the largest sustainably managed and MSC-certified fishery in United States), in our family's own small boats, are cured with salt and sugar only (no nitrates or nitrites!). After being cured, they were cold-smoked in a small German kiln at 78 degrees F for 13 hours. They are are unsliced, so the lucky winner can slice fish as thick or as thin as she or he wishes.
Item Special Note
The fillets will be received frozen. To "refresh" the fillets, simply place in refrigerator for approximately 6 hours. Once the fillets have been defrosted, the fish will keep happily for 10 to 14 days in the refrigerator.
