Owner Frank Scibelli, raised in the grand tradition of hearty family dinners, dreamed of owning a restaurant featuring Italian dishes he grew to love in his family’s kitchen. Nearly 15 years has passed since he made that dream a reality and in that time, Mama Ricotta’s has become the restaurant of choice for thousands of Italian food lovers. Mama Ricotta’s grew from a small restaurant to a 200-plus seat establishment. But despite the growth that comes with rising to the top of the list of Charlotte’s most beloved restaurants, Mama Ricotta’s has upheld unfaltering standards for food and service. The restaurant has won nearly every major restaurant award Charlotte has to offer and is counted as a permanent fixture on the City’s thriving culinary scene.

In the restaurant, Mama Ricotta’s serves traditional, authentic Italian dishes in an inviting setting where everyone feels welcome. Thanks to a loyal following in the restaurant, Mama Ricotta’s has also grown into a multi-faceted catering division with more than 200 employees. The catering division can boast a client list that reads like the “Who’s Who” of Charlotte. Between the restaurant and catering business, Mama Ricotta’s has become one of the largest food service companies in the area.

Mama Ricotta’s serves up traditional Italian food to thousands of patrons, but the quality of the food and service is what one might expect from a corner trattoria, or Italian café in the heart of Italy. Scibelli often travels to Italy to work with chefs to sharpen his skills and learn new recipes. He continues to develop new relationships with vendors who help him continue in the grand tradition of providing the finest ingredients for the dishes Mama Ricotta’s restaurant guests have come to expect.

Mama Ricotta’s chooses the finest ingredients available, and the culinary staff and management is constantly trying to find new and better ingredients to evolve concepts. Great chefs know fresh, quality ingredients make all the difference, and Owner Frank Scibelli wouldn’t have it any other way. Mama Rictotta’s uses products like Locatelli Romano cheese, San Marzano tomatoes, Volpaia extra virgin olive oil, Latini and De Cecco pastas and Salumeria Biellese prosciutto among many others. Even the Double Zero flour is imported from Italy. Produce comes from local farmers’ markets as part of Scibelli’s ongoing commitment to support and sustain local farmers. While many of the ingredients used in Mama Ricotta’s preparation are imported from the finest producers, much of what goes into the dishes diners love are house made by the culinary team. Mama Ricotta’s features house made fresh mozzarella, breads, sausages, and sauces.

But such achievements are more than just assembling great ingredients. The success of Mama Ricotta’s restaurant and catering was built on the backs of many qualified, dedicated individuals.
