Item Description
Threefold Cafe chef and master of "medicinally-inspired vittles and libations" will give a hands-on cooking demonstration of the tea-brined, gluten-free and nutrient-dense fried chicken that astonished diners at the Farm to Table dinner. Everyone will receive the recipe and know-how to create the dish at home. Charlie will also share from his extensive knowledge of biodynamics, local sourcing and nutrition.
Demonstration takes place at Threefold Cafe kitchen, located in Chestnut Ridge, NY. All supplies provided including sparkiling beverages as refreshments. Dish is prepared gluten-free. After the demonstration and lesson, enjoy the fruits of your labor with a fried chicken feast!
About Charlie Miller:
Charlie, a veteran chef and graduate of Bauman College of Holistic Nutrition and Culinary Arts in Boulder, CO, cooks with a finely-attuned sense of the healing power of food and the importance of quality ingredients. A certified holistic nutrition consultant, Charlie has many years’ experience working as a natural-foods chef for clients with special dietary needs and restrictions.
As part of his commitment to cooking with the freshest and most wholesome ingredients available, Charlie has built strong working relationships with many Hudson Valley biodynamic and organic growers, including: • The Pfeiffer Center: biodynamic vegetables, many grown right across the street from the Café; • Duryea Farm of the Fellowship Community: milk, yogurt, biodynamic vegetables; • Threshold Farm(Philmont, NY): biodynamic vegetables; • Hemlock Hill Farm (Cortlandt, NY): free-range hens’ eggs, organic beef and pork; and • Hawthorne Valley Farm (Ghent, NY): biodynamic vegetables and dairy products.
Bread and pastries from Balthazar Bakery complement Charlie's own house-baked treats (traditional and gluten-free).
