In the 1970s, Piero Selvaggio knew he had to move away from the Red Sauce Italian he was serving at Valentino restaurant in Santa Monica. Piero went back home to Italy and rediscovered his country's real food heritage, bringing back such alien items as … carpaccio and arugula. Artisan Italian vintners also found a champion in Piero, and so you can thank him for every good bottle of Italian wine you drink that isn't wrapped in straw.
