Wild caught Gulf shrimp (Key West Pinks, Texas Browns, Whites, Rock Shrimp and others) are available nearly year round. Primarily JUMBO and COLOSSAL sizes. Each shrimp is frozen in a sulfite-free process to ensure perfect quality and easy portioning of the standard 5 pound bag. These are the shrimp sold in Whole Foods Markets. Fresh fish, primarily snapper and grouper, are occasionally available; and if you ask, John will hand fillet it for you. Fish are wild caught by wild fisherman (mostly Silas's relatives) on vertical lines (aka fishing poles) under carefully regulated permits. Unlike longline fishing which produces wasteful and environmentally damaging by-catch, your fish will be caught in a fair match up between fisherman and fish.
