Item Description
It’s become an annual tradition for Itani, who has traveled there every year for the last 10 years, methodically making and eating his way through all 47 of the country’s prefectures. It’s also where he fell in love with ramen, inspiring him to open his own place in Uptown Oakland nearly four years after launching his first restaurant, Hopscotch, around the corner.
His familiarity with Japan and its unique ramen culture is also what guides his more laissez faire attitude on what’s become a cult dish in the Bay Area, one that local foodies have been known to obsessively search out and deconstruct ingredient by ingredient.
