DASHI, is the cournerstone of Japanese food

The deliciousness of Japanese food starts with 'dashi', or Japanese-style stock.  Dried foods, such as fish, kombu kelp and shiitake mushrooms, along with other ingredients, are soaked or boiled in water to make dashi, which is bursting with 'umami' components.  The Japanese are particularly sensitive to the savory taste known as umami, and this has led to a Japanese food culture in which dashi can be modified to suit a wide variety of foods and can provide great depth of flavor.  No matter what other kinds of seasoning are used, dashi is essential in creating the inherent umami flavor of Japanese foods.  -Text taken from the Kayanoya book of recipes that is included in this gift pack.
