Born and raised in Healdsburg, California, Dustin Valette, has the community roots that make his restaurant very personal. Dustin opened Valette with his brother, Aaron, in 2015 after dreaming about their own restaurant for almost 20 years. He started cooking at 13 and, after studying at the Culinary Institute of America in New York, worked at acclaimed, fine-dining restaurants Aqua, Bouchon, and most recently, Dry Creek Kitchen. Valette reflects Dustin’s take on the new style of fine dining: high-quality, locally sourced food without the suits and pretense. With a nod to his wine list, Wine Enthusiast magazine named Valette to its “100 Best Wine Restaurants of 2015.”
