Since 1994, Beringer Vineyards Winemaster Ed Sbragia creates a small amount of the single-vineyard Cabernets available so interested collectors can experience each site's pure terroir expression, and the unique characteristics the components contribute to the flavor 'palette' he has available to him when he crafts his Private Reserve Cabernet Sauvignon. In celebration of his 25th year at Beringer in 2001, Ed chose the Bancroft Ranch Cabernet Sauvignon as his anniversary cuvee. With Cabernet of this quality, Ed takes a minimalist approach to winemaking. He used gentle pump-over techniques during fermentation for optimal extraction and then aged the wine for almost two years in hand-selected, custom-toasted barrels of new French Nevers oak from coopers with whom he has long-established relationships. The vines produce small, intensely flavored berries with powerful, concentrated fruit flavors and thick skins that yield rich tannins. Bancroft's forward fruit demonstrates the classic Cabernet flavor of ripe, sweet black currant. Imperial - Holds 6 litres or the equivalent of 8 bottles. Only 100 bottles made.
