When we opened Robert’s in June 2006, we had a certain idea: we could do a version of the big Maine seafood restaurant that was rooted in the tradition of these places, but also inspired by up-to-date food trends like local farm-to-table ingredients and more creative recipes. Owner Michael Landgarten had long been a fan, patron, and student of these large all-purpose (seafood-centric but not exclusively seafood) Maine restaurants.
Traditionally, coastal Maine seafood restaurants focus on a large, seafood-centered menu featuring steamed lobster, baked and fried seafood, steaks, burgers, and have a bar, and usually some outside dining. We liked this notion for Robert’s, but wanted it to be a “now” experience – about the best of Maine food. In the Midcoast region, the farm-to-table movement had started long before there was that name for it. Back-to-the landers there started restaurants that sourced directly from local fisherman and farmers.
We’re still searching for that ideal blend of traditional Maine, farm-to-table, and what’s best and real in new cuisine. Mostly though, we are guided by our purpose – to make guests happy!
