Jen Castle and Blake Spalding are chef/owners of a restaurant in a remote town in Utah, serving a blend of Western Range, Pueblo Indian, and Southwester flavors. This year, they were semifinalists for a James Beard Award, Best Chef: Southwest. Their ingredients are simple and honest: sustainably grown vegetables, herbs, and flowers, from the restaurant’s own no-harm organic farm, and Boulder-raised, grass-fed and –finished local lamb and beef. You and a guest will enjoy a truly farm-to-table dinner in a remote, spectacular setting, at the edge of the Grand Staircase Escalante National Monument.
