Foggy Morning, Nicasio Square, Loma Alta, Formagella, Nicasio Reserve With something for every palate, this collection is ideal for a cheese tasting, if you’re willing to share! Start with the mild Foggy Morning. Some tasters are surprised this is made from cow’s milk. Stay mellow with Formagella, similar to a Brie in the bloomy-rind family. Build up to buttery Loma Alta, slightly more aggressive than Formagella, with a distinct rind. Go bold with Nicasio Square, our popular entry in the washed-rind category. Nicasio Reserve stays firm and intensifies in flavor as it ages.
Nicasio Valley Cheese Company remodeled an existing dairy barn on their ranch to house the creamery, bringing in modern day cheese-making equipment from across the country, and recycling shipping containers to serve as ripening rooms.
Fresh milk exclusively from the Lafranchi ranch is brought over from the morning milking in a custom-made tank, and pumped into the creamery to begin the transformation into cheese.

Winning items can be picked up at P.S. 3 Charrette School, 490 Hudson St., NY, NY 10014 (between Christopher & Grove Streets). If you are unable to pick up your item (including gift certificates) at P.S. 3, you are responsible for additional shipping charges via FedEx.
