I will take you to a journey of food preservation in this in-depth private class on the traditional practice of preserving a range of foods. We will explore methods like pickling, lacto fermentation and canning to preserve seasonal foods at their peak, and the basic building blocks of a larder. Through this work in the kitchen we'll see how the history of mankind is reflected in the foods we eat.
