Begin with the book: Italian Cooking in the Grand Tradition (Hardcover) 1st Edition Hardcover – 1982 - by Jo Bettoja and Anna Maria Cornetto.

The great tradition of fine Italian food has been handed down through the centuries from mother to daughter, cook to cook, most often in old copybooks in which each recipe is carefully recorded in a spidery hand. The character of these recipes is extraordinary. Each dish offers s subtle blending of tastes both earthy and sophisticated, achieved by simple cooking, using fresh ingredients of only the best quality - not complicated techniques or sauces. Because fresh ingredients at their peak are so central to this cooking, the book is divided into seasons; each menu also has appropriate wine suggestions. Most menus are organized so that nearly everything can be prepared ahead of time. There are also extensive notes on ingredients and on keeping an Italian kitchen; a separate section on pasta and light dishes, as well as extra desserts; and an intriguing section on preserving foods: curing meats, sun-drying tomatoes, even making a delicious digestive liqueur, cedrina, from lemon verbena leaves. Although Italians love spectacular spreads of food - and there are a number of menus for parties, as well as for Christmas an Easter and other festive occasions - perhaps the most inspired meals here are impromptu.

Shipping charges are the responsibility of the winning bidder. The shipping charge will be added after the auction is completed and the destination is determined. Items will be combined into one shipment for winning bidders of multiple items to save on shipping costs.
