Beyond Bread opened its doors at 3055 North Campbell Avenue on February 2, 1998. The story began a few years earlier in Madison, Wisconsin. It was at this time that Shelby and Randie Collier began discussing where Shelby was going to take his experience in the restaurant business. A life as owner of a quiet little bakery where Shelby would rise early, bake beautiful loaves of fresh artisan bread and be home by mid-afternoon sounded terrific. So, leaving his bachelor’s degree in Psychology behind him, Shelby began his training at Madison Sourdough Bread Company, learning from Master Baker, Cameron Ramsey. Eighteen months later, Shelby and Randie moved from Madison to Tucson, Arizona.
Beyond Bread opened quietly but business started booming rapidly. Doubling as sandwich makers, slicers, and even the cleaning crew, the bakers had trouble finding time to bake the bread. Servicing the customers in the beginning required only 10 employees, however, the staff now numbers over 160. Offering sandwiches was almost an afterthought in the original business plan, while the generous portions and variety of offerings resulted in a whopping success. Yet, what could be better than freshly baked turkey, made on site, stacked high between wonderful fresh handmade bread topped with a score of delicious condiments?
Starting simply with wonderful cookies, scones, muffins and a few cakes, the pastry department at Beyond Bread began to establish a highly respected reputation in town. Before long, decadent desserts were created to meet the customers’ demands, filling the cases with everything from “death by chocolate” cookies to turtle cheesecake, gorgeous fresh fruit tarts and even homemade granola. Tucsonans empty the shelves daily, treating themselves to the made-from-scratch desserts hard to find elsewhere in the city.
The dream of a quiet little bakery was fading away...
With business booming, the 2500 square foot facility became extremely crowded. Working space for the staff was terribly cramped and inefficient, customer seating and parking was a constant problem, and there was no place to expand within the building. Eastsiders were begging for a Beyond Bread of their own, so we opened a much larger, state-of-the-art baking facility and eatery at 6260 East Speedway in March of 2002. The new location afforded room for two European bread ovens, space for the majority of the food production for both stores, and a beautiful seating area both inside and on a fabulous outdoor patio.
Just as we were working out the details of having two locations and transferring product between them, we were confronted with an option of moving the original Beyond Bread on Campbell across the street to a vacant Village Inn. The remodel project was an enormous undertaking, but in July of 2003, the move took place. Customers were thrilled to find a parking lot dedicated to Beyond Bread patrons, and spacious indoor and outdoor seating. It didn’t take long for the new Campbell store to surpass everyone’s expectations.
What is next for Beyond Bread? The possibilities are endless for what the future holds. In the meantime, there is always a great loaf of bread or sandwich awaiting you at one of the current stores...
