Item Description

Dennison Meats has 1/2 a lamb for you raised on the farm of SCC's Farm Business Management Instructor Eric Kinsley. 

Winning bidder will receive half of a lamb (approximately 45 - 55 pounds hanging weight) and standard processing. Updated 2/11/19: hanging weight = 49 pounds. Lamb to be processed per buyer’s preference at Dennison Meats in Dennison, MN. This offering is a locally raised, corn fed lamb and hormone free. 

Lamb is a delicacy typically purchased at high end restaurants and meat markets and is quickly gaining popularity in the US. Lamb from this farm has sold for 20+ years with outstanding customer satisfaction for use in meat markets, restaurants, weddings and religious celebrations (our lamb has been served to the Prince of Jordan) and family kitchens in the upper Midwest. 

Special Instructions: Standard processing fees of approximately $45 are included in this package for a half lamb when standard cuts (chops, steaks, roasts, shanks, ground lamb and/or stew meat) are selected, and is donated by Dennison Meats. 

Other processing options include bratwursts and/or gyro meat, however additional fees will be incurred at the buyer’s expense for these choices due to adding other meat (pork with brats and beef with gyro) plus extra processing by Dennison Meats.

The hanging weight of the lamb will be posted by 02/07/19 after harvest. Lamb will age to tenderize and will be processed approximately 2/14/19. The buyer will be contacted the day after the sale for cutting instructions. The buyer will take possession of the meat from Dennison Meats within 30 days of final processing.

Dennison Meats is a family-owned business that has been providing exceptional custom processing of meat for over 50 years. They regularly process beef, pork, lamb, goat, venison and elk and most poultry to meet the preferences of their customers. Smoking, sausage/bratwurst making and cutting are all done onsite. USDA inspected retail cuts are also available for onsite purchase.

 

Item Special Note

Winning bidder will receive a certificate with contact information to call the processor and provide directions on how to finish processing the lamb. Winning bidder will pick up the processed lamb from the processor within 30 days of final processing. Certificate must be picked up by February 20, 2019 from South Central College, Faribault Campus.
