Item Description
Headwaters is located in the historic Heathman Hotel in Downtown Portland. In fall of 2016 after a dramatic renovation, chef/owner Vitaly Paley and his longtime wife/partner Kimberly Paley opened the reimagined dining room at the Heathman Hotel. The property, which possesses a storied culinary history, was constructed in the early Twentieth Century and is a member of the National Historic Register. Named for “the source,” Headwaters showcases local ingredients from Oregon’s diverse bounty, from farm to sea and an expression of Pacific Northwest flavors.
VITALY PALEY & KIMBERLY PALEY
Husband-and-wife team Vitaly Paley and Kimberly Paley have been pillars of the Portland restaurant world since 1995, when they opened Paley's Place on NW 21st Avenue. In 2005, Vitaly was honored with the James Beard Foundation's Best Chef Pacific Northwest award. In 2012, he was a James Beard Foundation Semifinalist for Outstanding Chef, was victorious on an episode of Iron Chef on the Food Network and was named Chef of the Year by Portland Monthly Magazine. Headwaters is the Paleys' fourth restaurant in Portland.
