Savage & Cooke is the latest creation of David Phinney, the winemaker behind The Prisoner and Orin Swift Wines. Savage & Cooke today offers 4 award-winning spirits — five-year-old Second Glance American Whiskey, four-year-old Burning Chair Bourbon, and two Ayate Tequilas, from agave “grown way up in the mountains of Mexico…where the high-altitude agave brings out a crisper, clearer taste in the tequila.” Phinney is growing his own heirloom grains. “I found the purest, cleanest, most delicious water in Sonoma’s Alexander Valley,” he says. “Uncannily perfect for distillation!” So he bought the spring, and will use its exceptional output for all Savage and Cooke products.
