Old Hampshire Blended Applejack hearkens back to the earliest days of the New Hampshire, when colonists utilized the abundance of apples in the area for beverages and sustenance, only to shortly discover they could be distilled through a process called jacking. Our version here at Tamworth Distilling starts with a blend of 100% grown and pressed New Hampshire Apples (including Crispin, Cortland, Macintosh, and Honeycrisp varietals) that are then fermented with wine yeast. Following the initial stages, the cider is then twice distilled in an alembic still before it’s finished with a two year charred barrel aging process which gives it a distinctive caramel color and whiskey-like notes of vanilla, cinnamon, and clove.
