The Savage & Cooke distillery, owned by Napa Valley winemaker Dave Phinney, is located on historic Mare Island and opened in 2018.
The decision to locate the distillery on Mare Island was due to its fascinating history as a naval shipyard, the plethora of space, stunning brownstone buildings and its proximity to both the Napa Valley and San Francisco. Savage & Cooke distills, ages, finishes, and bottles a range of brown spirits including Bourbon, Whiskey, and Rye.
Second Glance American Whiskey, The Burning Chair Bourbon, and Lip Service Rye are all aged, blended, and bottled at the Savage & Cooke Distillery. Dave uses grains and water from his own Northern California land to produce whiskies at the distillery and barrels from his different wine projects to finish each of the blends.
Your VIP tour and tasting for four guests will start with a tasting of Bourbon, Whiskey, and Rye as you make your way through the historic buildings and follow the process of making spirits from mash to barrel. It will include a visit to the private tasting room at Savage & Cooke - a former ‘vault’ that was used for housing the most classified of classified on Mare Island.
And for you to take home, three bottles: The Burning Chair Bourbon, Second Glance American Whiskey, and Lip Service Rye.
After your tasting, enjoy lunch on one of Vallejo’s favorite restaurants, Gracie’s. Since opening in 1999, they have served the community with the philosophy that good food brings people together. There's always room at the table, at Gracie’s.

Collection of California Sales Tax: Unless a valid resale permit is presented to seller prior to the sale, purchaser will be required to pay all state and local retail sales taxes applicable on the date of sale. Resale permits will be accepted only for businesses that are reasonably expected to buy and sell wine. Sales tax will be collected on the purchase price of each lot which contains tangible goods.
Shipping or Pick up of Wines: Shipping costs are the sole responsibility of the winner.
Non-Napa County winners must arrange for their wines to be shipped from The Packaging Company, beginning Friday, March 6, 2020 If you're the lucky winner, we'll call or email you with directions for making this happen.
Napa County winners of auction lots containing wine may pick up their wines at the St. Helena office of the UpValley Family Centers beginning Friday, March 6, 2020. If you are the lucky winner, we'll call or email you with directions and details.
