Dolce, California’s bar-setting late-harvest white wine from Far Niente, is modeled after the much-sought-after and long-lived Sauternes of Bordeaux.

Dolce is created when just the right elements — nature and superb craftsmanship — come together to produce a wine that is truly a triumph over adversity. It starts in the vineyard, where excellent soils, ideal climate, and expert viticulture converge. Located at the base of the Vaca Mountains at the southern end of the Napa Valley, the Dolce vineyard is planted to 20 acres of Semillon and Sauvignon Blanc. This is one of the coolest areas of the valley, well protected from the morning and evening breezes. The fog can settle longer, helping the all-important transformation of Dolce’s small crop each fall.

The making of Dolce is a hard-won effort. It’s a counterintuitive struggle in the vineyard to let the fruit hang long enough to develop high sugar levels, dehydrate for concentration, and develop the mold that is key to the sweet wine’s complexity: botrytis, that elusive “noble rot” is what makes a late-harvest wine special. “You have to have the courage to let a beautiful crop succumb to the forces of nature,” says Dolce’s winemaker, and you have to watch what the dry-wine vintners are doing in the vineyard and do the opposite—let the canopy drop around the fruit to keep in moisture, for instance (encouraging that mold), instead of pruning and trellising for sun and air.

The result is a profound pleasure—and here for you, is a 3-Litre bottle of this liquid golden nectar. 

The 2007 Dolce is youthfully fruity with layered aromas ranging from fresh-baked lemon bars to honey and caramel. In the mouth, the citrus aromas shift to peach and pineapple flavors. The silky entry evolves into a creamy and coating texture that is rich yet balanced through the finish. Concentrated and fruit-driven, this vintage will reveal additional layers of aroma and flavor along with a perfumed bottle-bouquet in the years to come.

Collection of California Sales Tax: Unless a valid resale permit is presented to seller prior to the sale, purchaser will be required to pay all state and local retail sales taxes applicable on the date of sale. Resale permits will be accepted only for businesses that are reasonably expected to buy and sell wine. Sales tax will be collected on the purchase price of each lot which contains tangible goods.

Shipping or Pick up of Wines: Shipping costs are the sole responsibility of the winner.
