Brothers Dustin Valette and Aaron Garzini had a lifelong dream of opening their own restaurant in Healdsburg and after 20 years of planning, they realized their vision when Valette debuted in March 2015.  Valette began his restaurant career at the age of thirteen washing dishes at Catelli’s in his hometown of Geyserville, California. Two years later he took an apprenticeship at Chateau Souverain, a Francis Ford Coppola Estate, where he worked under Executive Chef Martin Courtman. Valette honed his craft in some of the most celebrated restaurants on the West Coast, including the Michelin-starred Aqua in San Francisco and Napa Valley’s Bouchon. Most recently, Valette spent six years as Executive Chef of Dry Creek Kitchen, a Charlie Palmer restaurant in downtown Healdsburg. Chef Valette is nothing short of an artist: The plate is his canvas, and local produce and proteins are his paint.

Valette Cottage for 2
Enjoy a two-night stay in a one-bedroom cottage located just two blocks from Healdsburg Plaza.  The cottage takes up the entire second floor of a bungalow built in the 1950's by great- grandfather Honore Valette.  This 750-square foot cottage, completely remodeled in 2016, features vaulted ceilings, hardwood floors, and kitchen with marble countertops.  Enjoy the intimate Jacuzzi tub, gas fireplace, wine, beer, cocktail mixings, convenient washer and dryer, and basic pantry items in the kitchen.

NOTE: Sonoma is approximately 1.5 hours north of San Francisco and Oakland.

2018 Valette Rosé of Pinot Noir:  Discover bright refreshing aromatics of maraschino cherries, wild berry fruits, sandalwood, toffee and dried Bing cherries. The beauty of Rosé is its versatility, this wine can be paired with food or enjoyed on its own. The Valette Rosé of Pinot Noir is ideal served with wild salmon and cipollini onions roasted in brown butter and finished with a sour cherry marmalade, or simply enjoyed while eating fresh strawberries.

2019 Valette Pinot Noir:  The beautiful bouquet of aromatics are comprised of wild cherries, raspberries, violets, citrus blossom, Asian spice, green tea and the nuances of Périgord truffle. This is one of Dustin Valette's favorite wines to either enjoy by itself or paired with food, with an astonishing versatility due to the great acidity, bright fruit and beautifully balanced tannins. A favorite pairing of his is a Liberty Farms Duck Breast dusted with cocoa nibs and gently pan roasted, served with pickled dried cherries and riz rouge. The Valette Pinot Noir is so versatile it can easily go with a lightly roasted lamb loin infused with grains of paradise or a honey brined pork chop, the possibilities are endless.
