Item Description
Francine Martinie Chough, a native from Autun in Burgundy, taught gastronomy as well as the French language at the Alliance for many years. She enjoys cooking and has taught many cooking classes through community education in Vancouver, WA.
Francine will teach a series of three classes this summer based on recipes from her cookbook, Bricks in a Pebble Sauce, published in 2022. This series will be taught on zoom and is limited to six seats per class. Each session will run approximately an hour. Francine will demonstrate recipes from her cookbook and answer questions. This is an interactive event! Dates and times to be determined in early summer.
Session 1 – Appetizers: The process of making Pate à choux and demonstration of making gougères, a classic appetizer in Burgundy. Pages 43 and 175-177 in cookbook.
Session 2 – Main Dish: A demonstration of Hachis Parmentier, a comfort food dish (good for any season in rainy Portland.) Pages 118-120 in cookbook.
Session 3 – Dessert: Nougat glacé, a versatile dessert you can have on hand in your freezer any time of year. Pages 200-202 in cookbook.
