2005 Gold Label Coonawarra Cabernet Sauvignon

The 2005 Wolf Blass Gold Label Coonawarra Cabernet
Sauvignon is a very fragrant, rich, Coonawarra wine
showing the ripe, varietal aromas expected from this warm
vintage. The nose has aromas of mint, cassis, mulberry and
mocha; with elegant, light cedar oak adding to the fragrant
bouquet. These Cabernet aromas are reflected in the rich
palate, typically seen in the riper Coonawarra vintages.
The palate is softly textured with silky tannins and a long
seasoned finish. New and seasoned French oak enhances
the wine?s length and lifts this richly flavoured palate.

VITICULTURE

The fruit for this wine was sourced from both grower and
Company vineyards close to the Coonawarra township,
from vines aged between 10 and 30 years trained on a
single wire trellis with a single cordon and machine pruned
with a rigorous hand clean up to 40 buds per vine. These
vineyards consist of three main selections of Cabernet
Sauvignon and all add to the character of this wine with
some vineyards showing a distinctive mint character.

WINEMAKING

Each individual Cabernet Sauvignon block was harvested
and fermented separately in small rotary fermenters. The
gentle ferments went for 6 to 8 days with occasional
aerative pump-overs. After pressing off the skins, the wines
were racked into new and 1-2 year old French and
American oak to complete malolatic fermentation, before
being racked twice and returned to oak. After 20 months
maturation, each oak barrel group was tasted and the final
blend made up of the barrels that showed exceptional
varietal character, silky texture and fine-grained tannins.
