Tony Maws is the chef/proprietor of Craigie On Main restaurant in Cambridge, MA. He is a James Beard Award nominee, and winner of many other awards for best chef and best restaurant. His philosophy is that of a “techie grandma” – he makes full use of hi-tech cooking equipment and techniques but also believes in doing things the way grandmas have been doing them for centuries – using all parts of the animal, buying fresh produce every day, making everything from scratch and more. He truly walks the walk; everything on the menu is natural or organic. Tony also serves as his own wine director.
